Today is National Nacho Day!! Make it healthy with Apple Nachos with Peanut Butter Chocolate Dip! This is great for an after school snack for the kids!

DID YOU KNOW soaking or dipping apple slices in salt or lemon juice will slow them from turning brown?

The Science: Once the apple is cut or bruised, oxygen in the air combines with iron in the apple to form iron oxides causing oxidation therefor the apple turns brown.  

 

You can reduce browning by slowing oxidation in three different ways:

  1. Cook the apples
  2. Reduce the exposure to oxygen 
  3. Reduce the pH of the fruit.  Doing both by covering in an acidic liquid is the best way to keep apples from turning brown without cooking.

 

For apple nachos, all you need to do is slice apples and drizzle with chocolate.

You can add any topping you like:

  • pumpkin seeds
  • coconut
  • goji berries
  • chocolate chips
  • raisins

 

Peanut Butter Chocolate dip

  • 1/2 cup coconut cream from a can
  • 2 tbsp. peanut butter
  • stevia to sweeten
  • 1 tbsp melted Enjoy Life Vegan chocolate chips
