‘Cheesy’ Kale Chips
Recipe
Ingredients
- 1 bunch curly kale
- 1/3 cup nutritional yeast
- 1/2 red or orange pepper, chopped
- 1 garlic clove
- 2 tablespoons extra virgin olive oil
- 3/4 cup raw cashews, soaked (at least 1 hour) or pumpkin/sunflower seeds
- 1 tablespoon tamari
Method
- Rinse and dry kale and cut into large bite size pieces.
- Combine all remaining ingredients in a food processor until a paste forms.
- Massage paste into each kale piece to make sure evenly coated.
- Set oven to lowest temperature and bake for 2-3 hours.
Kale chips should be crispy when ready. Store in an airtight container.
