Creamy Beet Sauce with Sourdough Pasta
Creamy Beet Sauce with Sourdough Pasta
Serves 3-4 Prep time 5 minutes Cook time 20 minutes
Ingredients
- 325g Millet and Semolina Kaslo Sourdough Pasta
Sauce
- 2 large or 3 medium beets ~2 cups chopped
- 2 garlic cloves, chopped
- 2 tablespoons avocado oil
- 5 sprigs fresh thyme
- 1 cup organic whole milk or cream
- 1/3 cup parmesan cheese, shredded
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt or more to taste
Method
- Steam beets until soft.
- Meanwhile, sauté garlic and thyme on medium heat in avocado oil. Remove thyme.
- Boil water with a dash of salt. Cooking sourdough pasta until desired firmness (5-8 minutes). Drain.
- Combine beets, garlic, cloves and oil, milk, parmesan cheese, onion powder and salt into a powerful blender or food processor. Blend until smooth.
- Mix sauce with pasta and serve with parmesan on top.
